AW meters for measuring water activity

Measuring water activity is an important parameter in the quality control of moisture-sensitive products or materials.

If there is too much water in a product, there is a risk of microbial growth and water migration. This can lead to changes in consistency and reduced shelf life. Manufacturers of food and pharmaceutical products, for example, must be able to demonstrate to the FDA or NVWA that the water activity of a product has been reduced to such an extent that bacteria can no longer grow.

Water activity is the measurement of the free water molecules of a product. The water activity value (aw-value) is the RH/100 (%) of the air at the moment when the air no longer absorbs or gives off moisture, i.e. at equilibrium.

Why measure water activity?

For products that contain water, there is a risk that micro-organisms will affect the product. Moulds may form or the consistency of the product may change. These are often undesirable changes that reduce the shelf life of the product and in some cases also make it less attractive. As a supplier or manufacturer of foodstuffs for humans and animals or manufacturers of medicines, you want your product to reach the consumer in optimal condition. It is therefore important that a product has the right aw value and is stored at the right temperature to maximise its shelf life.
